
Just two miles from Juliet is our two acre vegetable plot, situated in the Victorian walled gardens of Lypiatt Park. The gardens supply salad, herbs, and speciality veg throughout the year, along with flowers for The Woolpack tables in Slad.
The team, managed by Juliet Chadwick, includes Tomer Shaltiel as head grower, supported by Alex Middleton as apprentice grower.
The gardens grow exclusively to supply Juliet and The Woolpack kitchens, and the close relationship between our growers and chefs allows them to carefully plan for each season. The dialogue continues to be tight, with harvests and deliveries occurring twice a week.
Following organic, biodynamic and no dig practices, the focus in the gardens is on soil health and biodiversity, with the enhanced flavour of each plant happily received by our chefs and guests alike.
Growing at Lypiatt has allowed us to create a circular system, where fresh produce deliveries to our restaurants are combined with the collection of green food waste. Back at the plot, these scraps are slowly returned to the soil as nutrient-rich compost, completing the cycle and building a resilient, healthy garden with living soil. A collaborative effort that leads to top quality veg, packed with flavour and full of nutrition.
